Caprese Salad Phyllo Cups

This classic salad served in mini phyllo cups makes the perfect summer fresh appetizer

Ingredients

  • 1 package of phyllo cups 15 per package
  • 15 assorted colored cherry tomatoes, sliced in halves, larger ones cut into quarters
  • 4 oz mini marinated mozzarella cheese, drained and cut into quarters
  • 8 basil leaves, thinly slices
  • 1/4 tsp coarse ground black pepper
  • 1/4 tsp sea or kosher salt
  • 1 bottle of balsamic glaze

Instructions

  1. In a medium mixing bowl, combine the tomatoes, mozzarella cheese, basil, pepper and salt, gently toss
  2. Fill each phyllo cup with tomato & cheese mixture
  3. Drizzle a bit of balsamic glaze on each and enjoy

Recipe Notes

You can make the filling mixture a couple of hours before serving, and fill the phyllo cups just before serving to your guests, but keep in mind that the longer the filling sits, more moisture will come out of the tomatoes and you will have to drain the mixture in a sieve before filling the cups.
