Fig Sherry Vinaigrette

An autumn inspired dressing to keep fall salads fresh and seasonal

Ingredients

  • 1 Shallot, small, chopped
  • 4 oz fresh figs, ends trimmed and quartered
  • 2 tbsp sherry vinegar
  • 1/4 extra virgin olive oil
  • 2 tbsp honey
  • 1/4 tsp kosher salt
  • 1/4 tsp coarse pepper
  • 2 tsp Dijon mustar

Instructions

  1. Combine everything in a blender and blend until everything is combined and smooth.

  2. Use right away but for better tasting vinaigrette, refrigerate for a couple of hours to let the flavors develop. 
  3. Makes 2/3 cup, enough to dress a salad for 6 to 8 people  

Recipe Notes

Hint: if the vinaigrette is too thick for your liking, just add a bit of water to the blender and pulse blend it to your desired consistency
