Triple Chocolate S’more Coffee Cake Muffins

Have the campfire classic s'more flavor with these delicious muffins, perfect for breakfast with coffee or dessert with a cold glass of milk

Ingredients

  • 2 eggs
  • 3/4 cup milk
  • 1/2 cup cream cheese, softened
  • 4 tbsp unsalted butter, melted
  • 1 tsp vanilla
  • 1/2 cup brown sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 cups graham cracker crumbs
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup mini marshmallows
  • 3/4 cup semi-sweet chocolate chips
  • 1/2 cup milk chocolate chips

Crumb topping

  • 1/2 cup brown sugar
  • 1/2 cup sugar
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted
  • 3/4 cup graham cracker crumbs
  • 3/4 cup all-purpose flour

Instructions

  1. Preheat oven to 350 degrees





  2. In a mixing bowl of a stand mixer or with a hand held mixer, blend the eggs, milk, cream cheese, butter, vanilla, sugar and cocoa powder until blended









  3. Add the graham cracker crumbs, flour, baking powder and salt and mix just until blended









  4. Stir in the mini marshmallows and semi-sweet chocolate chips









  5. Divide batter among 12 well-greased large muffin cups, I use nonstick baking spray. 
    I didn’t have any large muffin cups so I used tall tulip paper baking cups to line my muffin pan to prevent over-spill, then sprinkle the milk chocolate chips on each









  6. In a small mixing bowl combine the entire crumb topping ingredients together and divide it on the top of each muffin









  7. Bake in oven for 25 to 30 minutes or until toothpick inserted into center of muffin comes out clean
