Mini Corn Dog Muffins

This very simple recipe is reminiscent of the fair favorite corn dog but no frying and kids and adults love them!

Ingredients

  • 1 8.5 box of corn muffin mix
  • 4 hot dogs, cut into 6 pieces each
  • mustard and ketchup for dipping

Instructions

  1. Preheat oven to 375 F

  2. generously spray a mini muffin pan that makes 24 muffins with non stick spray, I used a silicone one and I still sprayed it. set aside

  3. Make muffin batter according to package directions

  4. spoon batter into mini muffin pan, fill each cavity just over half

  5. place a cut piece of hot dog into the center of the batter in each muffin cup

  6. bake 10 to 12 minutes or until golden brown and let cool for 5 minutes before removing them from the pan

  7. serve with mustard and ketchup on the side for dipping. Makes 24, enough for 10 to 12 as an appetizer
