Ingredients

  • 1 cup unsalted butter, softened
  • 3/4 cup sugar
  • 3/4 cup brown sugar, packed
  • 2 eggs
  • 2 tsp lemon extract
  • 2 1/2 tsp yellow curry powder
  • 1/2 tsp cinnamon
  • 1/2 tsp cardamom
  • 3 cup all-purpose flour
  • 1/2 tsp kosher salt
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 cup golden raisins
  • 1 cup pine nuts

Instructions

  1. In large bowl with a hand or stand mixer cream together the butter, sugar and brown sugar
  2. Add the, eggs, lemon extract, curry, cinnamon and cardamom until light and fluffy, about a minute and a half
  3. Sift together the flour, baking powder, salt and baking soda and slowly add to the egg mixture until combined
  4. Stir in the raisins and pine nuts, cover and chill in the refrigerator for 30 minutes
  5. Preheat oven to 350 and line 4 sheet pans with parchment paper

  6. Drop batter by teaspoons on sheet pans, I use a mini cookie scoop

  7. Bake until golden brown for 12 to 14 minutes, let cool for 15 minutes before serving

  8. Yields 4 dozen cookies
