I’m sure you do and please try my newest recipe for these crunchy gems full of spices that are sure to please your guests at your tea party or when you are enjoying quiet time with yourself in the afternoon and your tea or coffee needs a bit of company. You might think that curry would be a strange spice in a cookie but think again, this worldly spice that is common in just about everyone’s’ pantry these days is a nice addition to this tea cookie, especially when blended with cinnamon and the citrus notes of the cardamom and lemon extract.

Curry, Pine Nut & Golden Raisin Tea Cookies
This cookie combines several spices for a tea cookie worthy of dunking and of course munching...
Ingredients
- 1 cup unsalted butter, softened
- 3/4 cup sugar
- 3/4 cup brown sugar, packed
- 2 eggs
- 2 tsp lemon extract
- 2 1/2 tsp yellow curry powder
- 1/2 tsp cinnamon
- 1/2 tsp cardamom
- 3 cup all-purpose flour
- 1/2 tsp kosher salt
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 cup golden raisins
- 1 cup pine nuts
Instructions

In large bowl with a hand or stand mixer cream together the butter, sugar and brown sugar

Add the, eggs, lemon extract, curry, cinnamon and cardamom until light and fluffy, about a minute and a half

Sift together the flour, baking powder, salt and baking soda and slowly add to the egg mixture until combined

Stir in the raisins and pine nuts, cover and chill in the refrigerator for 30 minutes

Preheat oven to 350 and line 4 sheet pans with parchment paper

Drop batter by teaspoons on sheet pans, I use a mini cookie scoop

Bake until golden brown for 12 to 14 minutes, let cool for 15 minutes before serving
