Mini Waldorf Salad in Phyllo Cups

I catered a memorial yesterday and sometimes in life I believe that we don’t always make decisions on our own.  My client had mentioned to me that when I had emailed her three different menus for this outdoor space that the mini Waldorf salad in phyllo cups jumped out of the page at her and that she immediately had to have them on the menu.  She had mentioned that Waldorf salad was a constant joke from a beloved British show “Faulty Towers” that she and her husband used to enjoy together.  I had replied to her that the Waldorf salad cups that I had put on the suggested menu for her was the first time I had offered that to a client. I always enjoy creating new menu items and sometimes I’m not sure where the inspiration comes from but this time, I’m sure it was a divine one for sure.

These phyllo cups combine the flaky crunchy mini cup to hold this classic salad so it’s much easier to enjoy this salad as a petite appetizer.  Serve at many different parties or casual get-together and your guests will be amazed at your little sophisticated offering while licking their lips in joy.

Mini Waldorf salad in Phyllo Cups

This classic salad served in crunchy petite phyllo cups makes for a perfect one bite treat

Ingredients

  • 1/3 cup mayonnaise
  • 1/3 cup plain full fat Greek yogurt
  • 2 tbsp honey
  • 1/4 tsp black pepper
  • 1/4 tsp kosher salt
  • 2 green onions, green and white parts, chopped
  • 1 tbsp orange zest
  • 2 tbsp orange juice
  • 1 cup honey crisp or red delicious apple, diced
  • 1 cup granny smith apple, diced
  • 1/2 cup celery, diced
  • 1/3 cup dried sweet cherries, chopped
  • 1/2 cup toasted walnuts, chopped
  • 2 boxes of phyllo cups (15) in each box
  • 1/3 cup Micro greens OR 1 tbsp chopped chives for garnish

Instructions

  1. In a small bowl, whisk together the mayo, yogurt, honey, salt & pepper and stir in the green onions, set aside

  2. In a medium bowl, add the orange zest and juice, adding the diced apple to this as you chop to prevent browning

  3. Add the mayo mixture to the apples and stir well

  4. Fold in the celery, dried cherries and walnuts 

  5. spoon the salad into each phyllo cup and garnish with micro greens or chopped chives on top and serve immediately, makes 30 petite salad cups
