I’m catering an event tonight of all kinds of “Southern Comfort” foods. I thought that these Bacon wrapped Chili & Cheese stuffed mini Bell Peppers would fit right in to comfort the hungry guests. This really is an easy recipe, there is no need to seed these peppers, there are very few in them and since they are not jalapenos, they are mild and many party guests will eat them right up. I used canned mild chopped green chilies but if you want these to be spicier, by all means get the hot ones. Enjoy these with a cold beer and it will bring you back to that old wooden swing on that front porch, come on back ya here!
Ingredients
1 -8 oz. block cream cheese
1 cup of shredded sharp cheddar cheese
1- 4 oz. can of chopped green chilies
1 teaspoon chili powder
2 teaspoons chopped garlic
3 green onions, chopped
20 mini sweet bell peppers cut in half lengthwise
20 slices of bacon cut in half (not thick sliced bacon, the thin bacon works best)
OMG these are so good!
Directions
Preheat oven to 400 degrees F
Soften the cream cheese in the microwave for about 1 ½ minutes
Stir in the cheddar cheese, canned chopped green chilies, chili powder, chopped garlic and green onions
Fill each bell pepper half with cheese mixture, wrap with bacon, place on parchment lined sheet pan and bake for 20 to 25 minutes until bacon is cooked and brown.
Makes 40 mini stuffed peppers, enough for 12 for an appetizer
