When it comes to dessert there is no substitute for chocolate, I don’t meet that many people that don’t like it. If I don’t have some kind of chocolate offering at a party, usually someone asks me, where it is with a disappointing tone. I love to make desserts and I make all kinds of delicious sweets, some can be complicated but sometimes the simple recipes can also be very satisfying. That’s why I came up with this simple recipe that combines my love for cherries and chocolate, together the two are a match made in heaven and this only takes a few minutes to put together and only a half hour or so to bake. You will be counting down the minutes until you get a spoonful of this luscious dessert for any day of the week or of course for a party. I baked this in individual baking dishes for a cute way to serve at parties but you can also get out your 9×12 baking dish and serve it in that…it will certainly taste the same.

Easy Cherry Brownie Cobbler
This rich and gooey dessert is perfect served warm with vanilla ice cream and so easy to make!
Ingredients
- 18 oz package of good triple chocolate brownie mix
- 1/2 cup buttermilk
- 1/4 cup oil
- 2 eggs
- 1 tsp vanilla
- 1 tbsp instant espresso powder
- 3 3/4 cups frozen pitted cherries, do not thaw
- 1/2 cup sugar
- 2 tbsp corn starch
- 1/2 tsp almond extract
Instructions

Preheat oven to 400 degrees

In a mixing bowl combine the brownie mix, buttermilk, oil, eggs, vanilla and espresso powder and mix well, set aside

In another mixing bowl combine the cherries, sugar, corn starch and almond extract and mix well so all the cherries are coated with the corn starch and sugar

Pour the cherries into a greased 9x12 in baking pan or divide among 15 3 oz. mini baking dish or ramekins

Pour brownie cobbler batter over the cherry mixture, if using the small baking dishes or ramekins pour ¼ cup batter over each

Place in preheated oven for 35 minutes if you are using a 9X12 pan or 25 minutes if using individual baking dishes or ramekins, a simple test of sticking a toothpick into the top and if it comes out clean, it's done.

Serve warm or cool and serve with ice cream or whipped cream and chocolate sauce. Serves 12 to 15
