Mexican Style Refried Bean Dip-Joseph Sciascia
Dips of all kinds are very popular at any party, but bean dip is so satisfying and creamy when paired with crunchy corn chips. I bet you can’t eat just one, right? This recipe is perfect for all kinds of parties, if you have a big party, just double or triple the recipe. Easy recipe with delicious results…no more canned bean dip for you once you taste this Mexican style treat; so pull up a chair to that tail gate party with a beer and enjoy.
Ingredients
¼ cup of chopped onion
2 cloves of chopped garlic
2 teaspoons olive oil
1 15 oz can refried beans
½ cup of salsa
5 slices of pickled jalapenos
2 tablespoons of pickling juice from the bottled jalapenos
1 teaspoon chili powder
¼ teaspoon cayenne pepper
½ teaspoon salt
Directions:
- Heat olive oil in skillet over medium heat and sauté onions and garlic until translucent, about 6 minutes
- Put all other ingredients in food processor, add onions and garlic and blend until very smooth
- Serve right away or chill for two hours and let the flavors meld
Can be served hot or cold with corn or tortilla chips
Yield: approximately 2 1/2 cups
