I’m sure I’m not the only one that opens the kitchen pantry and refrigerator when a sweet tooth is knocking at your door and you are in your pajamas and do not want to drive to the market for baked goods. Last night we were getting ready to watch a scary monster movie, we were still full from dinner and I was having a craving for something sweet. I kept opening and closing the kitchen cupboard thinking that a cupcake, cookie or candy would just magically appear in front of me, well…it didn’t. So I looked at my ingredients and quickly decided that this would be something I had to bake myself and it needs to be easy…. Bingo…Peanut Butter Blondies from cake mix and they turned out great…I wasn’t even going to take a photo of them or share this recipe for them but since they did turn out, why not?
Ingredients
1 box of yellow cake mix (read the ingredient label, some are vegan)
1 teaspoon vanilla
1 cup creamy or crunchy peanut butter
2 tablespoons flaxseed
1/3 cup water
1/3 cup of oil, shortening or melted vegan butter
1 cup chocolate chips (optional)
½ cup chopped peanuts, pecans or walnuts (optional)
Directions
- In a small bowl mix together the flaxseed meal and water together and let sit for 15 minutes
- Preheat oven to 350 degrees F
- With an electric mixer, cream together the flaxseed mixture with the oil and peanut butter until creamy
- Add the cake mix and blend until just mixed together
- Mix in chocolate chips and nuts if using them
- Pour into well-greased 8X8 square glass baking dish or a round cake pan
- Bake for 25 minutes and let cool for another 20 minutes, cut and serve
