Coconut, Almond & Chocolate Chip Granola-Joseph Sciascia
I made this granola to pair with my other recipe of Jamaican Jerk Rub as a party giveaway treat bag for the party guests for a sit down dinner that I’m catering tomorrow night. The theme is “Gilligan’s Island” so I thought these two gifts would be a nice touch for the guests to take home with them at the end of the night. Eat the granola right out of the bag if you can’t resist….you can also enjoy it in a bowl with milk or on top of ice cream or yogurt
Ingredients:
2 ½ cups old fashioned oats
1 cup sliced almonds
1 cup crushed macadamia nuts
1 teaspoon pumpkin pie spice
1/3 cup of honey
1/3 cup of oil
1/3 cup brown sugar
1 teaspoon coconut extract
1 cup of semi-sweet chocolate chips
Directions:
- Preheat oven to 300 degrees F and line a baking sheet with parchment paper
- In a large bowl mix together the oats, almonds, macadamia nuts
- In another bowl mix together the honey, oil, brown sugar and coconut extract.
- Pour over dry ingredients and mix well
- Pour onto baking sheet and bake in oven for approximately 30 minutes, stirring half way through and rotating baking sheet until golden brown.
- Cool completely and stir in chocolate chips
