I developed this recipe for a “Gilligan’s island” party themed dinner party and one of the three appetizers. didn’t want to make a traditional crust, I thought it would be too filling and as a passed appetizer a bit too messy; so these two bite island style treats fit the menu perfectly. These mini Hawaiian style pizza tarts will be a sure hit at your next party, Hawaiian style or not.
Ingredients:
2 boxes mini phyllo shells (15 per box)
1/2 cup smoked Canadian bacon, chopped or half package of 6oz package
1/2 cup chopped pineapple (you can used canned pineapple tidbits, drained)
2 tablespoons diced red onion
1 small green bell pepper, chopped
2/3 cup pizza sauce
1 teaspoon dried Italian seasoning
2 tablespoon Parmesan Romano cheese
1 1/4 cup shredded Italian cheese blend (reserve ½ cup for topping)
Chopped chives for garnish
Makes 30 bites
Directions:
Preheat oven to 350 degree F and place the phyllo shells on a parchment lined sheet pan
Mix everything together reserving ½ cup of the Italian cheese blend
Fill each phyllo shell with the filling and top with the reserved cheese
Bake until golden brown and bubbly, approximately 10 to 15 minutes
Garnish with chopped chives sprinkled on top and serve
