Spicy Chipotle Lime Peanuts –Joseph Sciascia

I love spiced nuts of all kinds and I love chipotle, I make many recipes with it. These spicy chipotle lime peanuts are delicious and with a nice amount of heat. Nuts are perfect at all parties, why go all plain Jane when you can mix a few ingredients together in this simple recipe and raise the roof at your next soiree. This also makes great party favor gifts or a gift for someone’s birthday, which is what I’m making these. Celebrating a birthday with the spice of life…the heat will remind you that you are alive and well and you made it to 50! Happy Birthday my dear brother in law Sean!
Ingredients
3 cups unsalted roasted peanuts (1lb)
1 tablespoon olive oil
Zest and juice of 2 limes
2 teaspoons chipotle powder
½ teaspoon cayenne pepper
1 teaspoon garlic powder
1 tablespoon smoked sea salt
2 tablespoons brown sugar
Directions
- In a medium mixing bowl combine vegetable oil, zest and juice of the limes, chipotle powder, cayenne pepper, garlic powder, smoked sat and brown sugar and blend well with a whisk.
- Preheat oven to 350 degrees F
- Pour peanuts on a parchment paper or silicone mat lined sheet pan, spread evenly and pat down for a single layer.
- Bake for 20 minutes, until golden brown and almost dry
- Transfer onto another sheet pan lined with paper towels to cool and dry
- Store in airtight container, once cooled
