I love serving fresh fruit bruschetta, I do a similar recipe with strawberries but my favorite is this one with figs. The tanginess of the goat cheese with the sweet fruit along with the rich balsamic glaze and the crunchy earthy note of the pistachios go so well together; your taste buds will be having a party as well. Whether it’s a wine tasting party, cocktail party or picnic, bruschetta is always a versatile and easy crowd pleasing appetizer. Sometimes the simplest recipes are the best.
Don’t be fooled, it almost looks like dessert
If you don’t already have a bottle of balsamic glaze in your pantry, please run out and get one, it’s such a versatile item staple in your kitchen…I use it on almost everything, just not ice cream…yuck
Fig & Goat Cheese Bruschetta
Savory, crunchy, tangy and a little bit sweet...this bruschetta is sure to please all your taste buds
Ingredients
- 1 baguette, sliced diagonally into 1/2 inch slices
- 2 tbsp olive oil
- 8 oz goat cheese, softened
- 1 pint fresh figs, sliced
- 1 bottle of balsamic glaze for drizzling
- 3/4 cup pistachios, crushed
- 2 tsp cracked black pepper
Instructions

Preheat the oven to 425

Place the baguette slices onto a sheet pan and brush each one with olive oil and toast until lightly browned around the edges, about 5 to 6 minutes, let cool for 5 minutes

Spread some goat cheese on each toast, followed by a slice of fig on top

Drizzle balsamic glaze on top, followed by a sprinkling of crushed pistachios and a pinch of black pepper

Makes approximately 24 pieces, serves 8 to 12 as an appetizer
