I get excited when I create new recipes that turn out fabulous and these crab & pimento cheese mini paninis are no exception. Combining the classic “caviar of the south” with crab puts these mini paninis way over the top. These little guys are the perfect cocktail sandwich for any time of year and once you bite into the crunchy sour dough crust and taste the creamy pimento cheese with crab oozing out the sides, the conversation you were having with the other party guest will completely go blank and you will no longer here what they are saying (nor care) because your mind will be in its happy place crunching on these wonderful cocktail sandwiches. You can just nod as if the other person thinks you are listening but we all know what really is important at this cocktail party, right? Ha, ha…
Mini Crab & Pimento Cheese Paninis
These crunch, creamy mini paninis are full of crab flavor and oozing with cheese, the perfect party appetizer that will please all your guests
Ingredients
- 1 sour dough baguetts, sliced into 30 slices
- 1/2 cup mayonnaise
- 1/2 tsp Old Bay seasoning
- 1/4 tsp cayenne pepper
- 1 cup sharp cheddar cheese, shredded
- 1/4 cup chopped pimento (half a 4 oz jar) drained
- 2 green onions, chopped
- 1/2 cup lump crab meat (4 oz)
- cooking spray
- Panini press or grill
Instructions

Slice the baguette and set aside

In a small bowl, combine the mayonnaise, Old Bay seasoning and cayenne pepper and mix well

Stir in the cheddar cheese, pimentos, green onions & crab

Heat the Panini grill

Make 15 mini sandwiches with the sliced baguette with the crab & cheese filling

When grill is hot, spray the Panini grill or press with cooking spray and place some sandwiches on the grill, spray the top of the sandwiches generously and close the grill and cook until there are dark grill marks on the mini sandwiches and set aside, repeat with the remaining sandwiches

Garnish with Spanish olives or mini pickles if you wish. Serves 4 to 6 as an appetizer
