This appetizer is perfect any time of year… surprise your guests with this delicious hors d’oeuvre when you tell them you will be serving deviled eggs, because this will certainly be unexpected. You won’t need that much of lobster to get the flavor and presentation, so this recipe won’t break the bank. Your guests will be raising their glasses of champagne, celebrating your good taste at your next party. Makes 12
Ingredients
6 hard-boiled eggs, sliced in half, yolks removed
1 tablespoon chopped red onion
3 tablespoons mayonnaise
1 teaspoon yellow mustard
1 teaspoon white vinegar
1 tablespoon capers, rinsed and drained
1 tablespoon pickle relish
Pinch of salt and pepper
½ teaspoon dried dill
6 ounces cooked lobster meat, roughly chopped
1 tablespoon cut chives
Directions
Mash the egg yolks in a medium sized bowl and add the onion, mayo, mustard, vinegar, capers, pickle relish, salt, pepper and dill, mix well and taste to adjust the salt or pepper
Fill the egg halves with the filling
Add the chopped lobster on top of the deviled eggs along with a sprinkling of chives
