Brunch is always a great time to party and what a way to get the day going, whether you are out to a restaurant with friends sipping mimosas or a special occasion that you are hosting with friends and family. I helped a client yesterday with a morning after wedding buffet brunch of “small bites” breakfast items but big on flavor. I had told my client when I met with her during the planning stages of her party that I don’t do big pans of scrambled eggs or omelet “stations” or pancakes, it’s just not something that I provide but I can provide a buffet spread of small bite brunch items that everyone will enjoy and not get bored of the brunch standards that everyone tends to serve. This casserole includes the ever popular comfort food of tater tots with cheese, eggs and breakfast sausage, all combined for a savory and tasty brunch dish that will please all your morning party guests.

Brunch Tater Tot Egg Casserole with Sausage & Cheddar
Brunch and comfort food go hand in hand, try this tater tot casserole and please your breakfast crowd
Ingredients
- 1 32 oz bag of frozen tater tots
- 8 large eggs
- 1 cup 1/2 & 1/2
- 3/4 cup Parmesan/Romano cheese, grated
- 1 lb breakfast sausage from a tube
- 1 red bell pepper, chopped
- 1 medium onion, chopped
- 3 cloves garlic, chopped
- 2 tsp fennel seeds
- 1 tsp kosher salt
- 1 tsp course ground pepper
- 2 cups sharp cheddar cheese
- 2 tbsp cut chives
Instructions

Preheat oven to 350 degrees F

Place the ¾ of the bag of tater tots in a well buttered 13X9 baking dish or 12 individual baking cups, set aside

Scramble the eggs, half & half and parmesan cheese and set aside

In a large skillet over medium/high heat, add the sausage, bell pepper, onion, garlic, fennel seeds, salt and pepper and sauté for 10 minutes, breaking up the sausage and stirring occasionally until brown and crumbly and pour over the tater tots in the baking dish or cups

Pour the scrambled egg mixture over the top of the tots

Sprinkle cheese on top and place in oven for 30 to 40 minutes or until golden

Garnish with cut chives or parsley and serve right away, serves 8 to 12
