Is your hand in a bag of potato chips right now? Are you suffering from the summertime snacking blues? I know I am so I whipped up this cheese. I turned the heat up on my classic Southern version of pimento cheese with Chipotle chilies…I have a few recipes on here that use them, I love them. The smokiness and heat from the smoked Chipotle chilies blend quite well with the cheddar in this recipe and is a nice surprise to this classic recipe. This cheese spread is so versatile, it’s great on sandwiches and burgers but you can always serve it with crackers or as a dip with vegetable crudités. Chipotle Pimento Cheese
This smoky & spicy version of this Southern classic cheese spread will be a great addition to your party appetizers or snacks!
Ingredients
- 1 cup mayonnaise
- 1/4 tsp kosher salt
- 1/4 tsp freshly ground pepper
- 1/4 tsp cayenne pepper
- 2 Chipotle chilies in adobo, chopped
- 1 lb extra sharp cheddar cheese, shredded
- 2 4 oz jars of chopped pimentos, drained
- 3 tbsp chives, minced
Instructions

Place the mayo, salt, pepper, cayenne pepper, chipotle chilies and half the shredded cheese in a food processor, if you have one, otherwise mix by hand or use a hand mixer and blend until smooth.

Stir in the remaining cheese, pimentos and chives

Store in a covered container in the refrigerator for two hours before serving so the flavors can mingle with each other

Serve with crackers, veggies or as a spread for sandwiches. Makes 3 cups
