I had some leftover Greek yogurt in the fridge from making a recipe yesterday and a bunch of blueberries; so what do I make? Yes, coffee cake sounds good. Not just to have with your coffee, I love coffee cake and blueberries and together with a crunch crumb topping is a bit of heaven on your plate for any time of day….even on a Thursday…lol. Since this isn’t for a party, I had one little bite and gave the rest away, better than throwing it in the trash and pouring hot sauce all over it so I wouldn’t eat it (true story) so I brought the rest of the cake with me to my hair stylist so everyone in the shop can enjoy it… have cake will travel. It’s amazing when I walked into the shop with this coffee cake, all eyes were on me; I said, back off girls there is plenty for everyone.

Blueberry Cardamom Yogurt Skillet Crumb Cake
This crumb cake is perfect for brunch or anytime of day...combining luscious blueberries with the lemony spice of Cardamon for a cake that you will be craving even at midnight.
Ingredients
- 1 cup sugar
- 1 1/2 cups all-purpose flour
- 2 tsp baking powder
- 1/4 tsp salt
- 1 tsp cardamom
- 2 eggs
- 3/4 cup Greek yogurt
- 1 tbsp lemon zest
- 1/4 cup butter, softened
- 2 cups blueberries
Crumb Topping
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/4 tsp salt
- 1 1/4 cup all-purpose flour
- 1/2 tsp cardamom
- 1/2 cup butter, softened
Instructions

Preheat oven to 350 degrees F

In a mixing bowl or stand mixer, blend together the sugar, flour, baking powder, salt and cardamom

Add the eggs, yogurt, lemon extract and butter and mix until just blended, don’t over mix

Combine all the crumb topping ingredients together in a bowl and with a fork blend it until it resembles clumpy corn meal

Generously butter and flour a 10 inch cast iron skillet

Pour half the batter into the skillet, sprinkle the blueberries evenly on top and pour the remaining batter on top of that and smooth over

Sprinkle the crumb topping evenly over the top and place in oven

Bake for 60 minutes or until a toothpick inserted into the center comes out clean

Let rest for 30 minutes before serving
