I was speaking with my sister Katie the other day sharing family memories and food… they go hand in hand. My sister remembered that our step grandmother Lee used to make cucumber & cheddar sandwiches and how delicious they were even though they were so simple with just cucumber, cheese & mayo. I came up with a recipe based on her tea sandwich with a smoky roasted pepper mayo to balance out the sweet cucumber and the tangy sharp cheddar along with arugula. These make a perfect spring offering for any kind of party, especially a Kentucky Derby party…it is coming up. NOTE: make this vegan by using vegan mayo and your favorite sliced vegan cheese
Cucumber & Cheddar Tea Sandwiches with Roasted Pepper Mayo
Not just ladies who lunch…these refreshing finger sandwiches are perfect for any occasion and they will keep your mint julep company
Ingredients
- 10 slices of sandwich bread, I used thin seeded bread
- 1 English cucumber, peeled with stripes and sliced thin
- 10 slices of sharp cheddar
- 1 1/4 cup baby Arugula
Roasted Pepper Mayo
- 1/2 cup Mayonnaise
- 1/3 cup jarred roasted red peppers, drained
- 1/2 tsp smoked paprika
- 1/4 tsp kosher salt
- 1/4 tsp coarse pepper
- 1/2 tsp balsamic vinegar
Instructions

blend all the roasted pepper mayo ingredients in a food processor and chill in the refrigerator until ready to use

take two slices of bread and spread some roasted pepper mayo on each slice

put some arugula on top of one slice, followed by about 8 slices of cucumber and on top of that a couple of slices of cheese, top with the other bread slice and repeat with the remaining slices of bread, you will have 5 sandwiches

cut the crust off all the sandwiches and then cut each sandwich into thirds and serve right away. If not serving right away, place them on a platter, cover with some damp paper towels and wrap tightly with plastic wrap and place in the refrigerator for no more than a couple of hours before serving.
