I made this recipe for an event that I catered earlier in the year as a kid’s option at a party…well I think the adults at the party ate more of them! Who doesn’t like a corn dog? These are a bit healthier since they are not deep fried. This recipe could not be any simpler and crowd pleasing at parties! Great options for this recipe, you can use any kind of hot dog for this recipe, beef, chicken or veggie
Here they are displayed at my clients home, they couldn’t eat enough of these even though these little bites were among tons of gourmet food…who would have thought.
Mini Corn Dog Muffins
This very simple recipe is reminiscent of the fair favorite corn dog but no frying and kids and adults love them!
Ingredients
- 1 8.5 box of corn muffin mix
- 4 hot dogs, cut into 6 pieces each
- mustard and ketchup for dipping
Instructions

Preheat oven to 375 F

generously spray a mini muffin pan that makes 24 muffins with non stick spray, I used a silicone one and I still sprayed it. set aside

Make muffin batter according to package directions

spoon batter into mini muffin pan, fill each cavity just over half

place a cut piece of hot dog into the center of the batter in each muffin cup

bake 10 to 12 minutes or until golden brown and let cool for 5 minutes before removing them from the pan

serve with mustard and ketchup on the side for dipping. Makes 24, enough for 10 to 12 as an appetizer
