Cranberry & Pecan Chicken Salad in Phyllo Cups

I have served this at so many parties over the years I have lost count.  These small chicken salad bites are perfect for so many occasions and not so much of a commitment like a full size sandwich would be, but you definitely can serve this as a full size sandwich and great on a croissant or mini croissant.   These perfect little bites are great served at cocktail parties, showers or tea parties and so tasty.  You can make the salad a day before and right before the guests arrive, scoop it into the phyllo cups and they are ready to serve, yes it’s that simple.  This sweet & savory chicken salad has a great crunch from the pecans and celery with a fresh note from orange, now this is a recipe for a party!

Cranberry & Pecan Chicken Salad in Phyllo Cups

This sweet & savory chicken salad is so versatile, serve it in mini phyllo cups as a small bite or serve it over greens for a salad or a full sized sandwich

Ingredients

  • 2 boxes frozen phyllo cups (30 cups total)
  • 3/4 cup mayonnaise
  • 1 medium orange, zest and juice
  • 1 tsp dried tarragon
  • 1 tbsp Dijon mustard
  • 1 tbsp honey
  • 1/4 tsp kosher salt
  • 1/4 tsp course black pepper
  • 1/4 cup celery, minced
  • 1/3 cup dried cranberries
  • 11/4 cup cooked chicken breast, chopped
  • 1/2 cup roasted pecans, chopped (divided)
  • 3 green onions, chopped

Instructions

  1. Preheat oven to 350
  2. Unpackage the phyllo cups and place them on a sheet pan and bake in oven for 6 minutes and set aside to cool. 

  3. Mix together the mayonnaise, zest and juice of the orange, tarragon, mustard, honey, salt & pepper.
  4. Add the celery, cranberries, chicken, ¼ cup pecans and green onions and mix well. 
  5. Scoop into phyllo cups and garnish with the reserved chopped pecans and enjoy.
