The big game day is coming up and I’m sure you are already searching for some tasty and easy to make party food recipes. I wanted to share my recipe for you that combines the tartness of granny smith apples with the savory flavors of ham & cheddar with the ease of store bought pie crusts. I love cheddar and tart apples together and snack on them occasionally and putting that in a pie with ham, yum! Surprise your party guests this year with something different besides nachos or pigs in a blanket, those are great choices but something different to bring to the table or tail gate party is always a nice treat. That is what makes this appetizer a good thing, it’s portable…not that you would want to put them in your pocket and carry them around with you lol. They don’t need to be served piping hot, so when you do bring a platter of these to a party, they are just as good at room temperature as they are warm. Now this is a sure touchdown bite and a sure Recipe For A Party…

Flaky, savory with just a touch of sweetness and these would go great with a beer!
These would also make a great brunch bite to welcome guests…and great with Mimosas I’m sure
Mini Apple, Ham & Cheddar Hand Pies
This mini hand pie combines the tart and sweetness of apple with the savory notes of ham and cheddar... a perfect pocket sized appetizer for any get together!
Ingredients
- 1 tsp olive oil
- 1 large shallot, minced
- 6 oz ham, diced
- 1/4 tsp kosher salt
- 1/4 tsp black pepper
- 1/4 tsp dried thyme
- 2 medium Granny Smith apples, cored, peeled and diced
- 1 1/4 cup sharp white cheddar, shredded
- 6 pre made refrigerated pie crusts (3 double pack)
- 1 egg yolk
- 2 tbsp water
Equipment
- 4 inch round cutter
- 3 sheet pans, lined with parchment or silicone mat
Instructions

Drizzle the olive oil in a small pan over medium high heat on the stove-top

Add the shallot, ham, salt, pepper and thyme and sauté for 5 minutes, stirring occasionally. Take off heat and let cool for 10 minutes

Add the ham/shallot mixture to a mixing bowl with the diced apples and shredded cheese and mix

Cut rounds of pie dough with a 4 inch cutter, you will get 5 out of each pie crust, totaling 30 small rounds.

With a brush or your fingertips, dab a bit of water around the top edges of each dough round, add a rounded tablespoon of apple/ham mixture in the center of each, fold over and crimp the edges with a fork and cut 3 small slits in the top for venting.

Place all the pies on a parchment or silicone lined sheet pans and let chill in the refrigerator for 30 minutes

Preheat oven to 400 degrees

In a small bowl whisk mix together the egg yolk and water and brush the tops of each pie and bake in oven for 18 to 22 minutes until golden brown. Let cool for 5 minutes and serve

Makes 30 mini pies, enough for an appetizer for 12 to 15 party guests.
