Why limit yourself with chicken & waffles when you can have pork & waffles; my new recipe for these cute mini jalapeno cheddar corn waffles with BBQ pulled pork will get your country party flavor on for sure. The inspiration for these cute things were from an email from a client regarding her menu choices for her upcoming cocktail party and one of the choices that she had sent me on her list was “pulled pork tartlet” and I was like, girl, huh? What’s that? I don’t have that on my menus and she said that she thought I could make something up with pulled pork that would be appropriate at her cocktail party without the mess…I said, I’m on it… I had to taste them after making these and they turned out cheesy with a slight kick from the jalapenos and a crunch from the cornmeal and a perfect petite bite for those sophisticated soirees or backyard country potlucks ya’ll.
Mini Jalapeno Cheddar Corn Waffles with BBQ Pulled Pork
Mini savory corn waffles topped with tender pulled pork is a perfect small bite appetizer at any party!
Ingredients
- 1/3 cup buttermilk
- 1 egg
- 1/2 tsp cayenne pepper
- 2 tbsp hot or mild pickled jalapeno slices, minced
- 1 tbsp brining liquid from the pickled jalapeno jar
- 1/2 cup shredded sharp cheddar cheese, chopped
- 8.5 ounce box of cornbread mix "just add milk & egg" variety
- 2 cups cooked pulled pork, chopped
- 1/2 cup BBQ sauce
Instructions

In a mixing bowl whisk together the buttermilk, egg

Stir in the cayenne pepper, chopped jalapeno, brining liquid, cheddar cheese and cornbread mix until well mixed, it will be thick

Turn on mini waffle iron and when ready, spoon 1/2 a tablespoon per cavity, I used a mini waffle iron that makes 8, 2 inch mini waffles, if you don't have one, you can use a regular waffle iron and cut each waffle into small bites. My mini waffle maker made 40 mini waffles

Heat up the pulled pork with the BBQ sauce and top each waffle with a teaspoon of pork and garnish with chopped green onion, chives or jalapeno slices
