This creamy, velvety dessert is much different to the traditional Tiramisu dessert that I was never a fan of. Lemons and blueberries are a perfect match in this delectable dessert recipe and you can impress your party guests and make it fancy by serving it in a glass. If you can’t find fresh blueberries then the frozen ones are just as fine in this recipe. Wake up your winter blues with the bright dessert…you just may want to push that New Year’s diet resolution to the side, just this once.
Ingredients
6 egg yolks
1 cup sugar
¼ cup of fresh lemon juice
3 tablespoons lemon zest
16 oz. Mascarpone cheese
2 cups whipping cream
20 Ladyfingers
Limoncello syrup
1/2 cup Limoncello liquor
1 cup sugar
½ cup lemon juice
1 tablespoon lemon zest
Blueberry sauce
4 cups fresh or frozen blueberries
1/2 cup confectioners’ sugar
¼ cup water
1 tablespoon corn starch
1 tablespoon lemon juice
Instructions
- Whisk yolks, sugar, lemon juice and lemon zest over medium heat in a double boiler and whisk constantly for about 10 minutes until sugar melts and mixture thickens. Let cool slightly and stir in the mascarpone cheese
- Whip the cream and fold into mascarpone mixture, cover and place in refrigerator until ready to assemble the dessert
- In a small sauce pan over medium heat, combine the Limoncello liquor, sugar, lemon juice and lemon zest and cook for a few minutes until the sugar has dissolved and set aside
- In a medium sauce pan combine the blueberries, sugar, water, corn starch and lemon juice and bring to a boil stirring occasionally and then bring down to a simmer until sauce starts to thicken, about 5 minutes and set aside
- In 6 glasses, like a stemless wine glass or other short glass, break 2 lady fingers into each glass and drizzle Limoncello syrup over them
- Spoon half the mascarpone mixture over the lady fingers in each glass and then a couple of tablespoons of blueberry sauce over that. Divide the remainder of the mascarpone mixture on top and then finishing with the remainder of the blueberry sauce and stick 1 lady finger into the mixture on the top halfway in. Chill for at least 3 hours or overnight Serves 6
