What did you do the day after Thanksgiving? Most people either rested from the hectic day of cleaning and cooking and cleaning again or go shopping. What did I do, well, I baked…Yes I cooked last night but its cold today and my other half and I are home, so I thought I would bake something. My partner is vegan and off today so I thought I would make vegan peanut butter, chocolate chip & pecan cookies and they were a hit. These cookies are crunchy, peanutty, and chocolaty and the pecans added the right amount of additional flavor to these country cookies. Even though I’m a bit tired today, I find myself in the kitchen creating new recipes; it relaxes me and puts me in a different element. Plus I don’t have to hear, do we have something sweet besides pumpkin pie? Sometimes I’m a slave to the stomach!
Vegan Peanut Butter, Chocolate Chip & Pecan Cookies
These delicious cookies combine the comfort of a peanut butter cookie with chocolate and pecans and are perfect for dunking in chocolate milk
Ingredients
- 2 tbsp flax-seed meal
- 1/3 cup plus 3 tbsp water
- 2 tbsp vanilla
- 1 cup vegan butter, softened
- 1/2 cup brown sugar
- 1 cup granulated sugar
- 1 1/2 cups creamy or crunchy peanut butter
- 2 1/2 cups all-purpose flour
- 2 tbsp tapioca flour
- 1 1/2 tsp baking soda
- 3/4 tsp kosher salt
- 11.5 oz vegan dark chocolate chips
- 1 1/2 cups toasted pecans, chopped

In a small bowl whisk the flax-seed meal and water, let rest for 10 minutes

In a large mixing bowl with a hand mixer or a bowl of a stand mixer, cream together the vanilla, vegan butter, brown sugar, granulated sugar and peanut butter until well combined and creamy. Add the flax-seed mixture and mix in

In another bowl whisk together the flour, tapioca flower, baking soda and salt and add to the wet ingredients slowly mixing until it all comes together, dough will be stiff and a bit crumbly

Mix in the chocolate chips and pecans, pat down and cover, let sit in the fridge for 30 minutes, I find that chilled cookie dough bakes so much nicer and doesn't spread out as much

Preheat oven to 375 F

Form the dough into balls from a rounded tablespoon or a cookie scoop onto parchment lined sheet pans, I got 40 cookies, so depending on how big you make them, you could come up with a few less or a few more…

Bake in oven for 15 to 18 minutes, mine came out exactly at 18 minutes in a convection oven

Let cool on the baking sheet for 10 minutes before placing them on a platter or cooling rack
I have fond memories of looking forward to my daily entertainment of watching the cookie monster on Sesame St. as a child…his first appearance was in 1966, the year I was born! Make sure to eat your delicious cookies with as much enthusiasm, I think they taste better that way…
