I love it when I create recipes and they turn out perfect on the first try, my excitement is like Christmas morning. My new recipe for these Bourbon butterscotch & chocolate chip blondies with pecans is my southern take on a classic blondie bar. I’ve been bored but also restless these days like I’m sure a lot of you, it’s hard to get motivated when you feel there is no need…but today I woke up from a nap, looked in my pantry and put together this recipe for a special client of mine. She always compliments me on my food, my ideas and my style when I help her entertain, she truly is a gift in my life and I want her to know that with these sweet but not too sweet blondies. The touch of bourbon is a nice addition and not overpowering at all, so please don’t leave it out when you make these treats. This pan makes 20 large bars or 40 smaller ones, so next time you need to sell something spectacular at the next church or school bake sale, whip these up and put smiles on faces…isn’t that what baking is for? Smiles upon smiles…
Bourbon Butterscotch & Chocolate Chip Blondies with Pecans
These chewy blondies with a southern twist will have you ringing the supper bell…but only to serve these first. Life is short so enjoy dessert first…
Ingredients
- 1 cup unsalted butter, melted and cooled
- 1 1/2 cups brown sugar, packed
- `14 oz can of sweetened condensed milk
- 3 eggs
- 1 tbsp instant coffee granules
- 1 tbsp vanilla extract
- 1/3 cup bourbon
- 3 cups all-purpose flour
- 2 tsp baking powder
- 1 1/2 tsp kosher salt
- 1 1/2 cups butterscotch chips
- 2 cups semi sweet chocolate chips
- 1 1/2 cups chopped pecans
Instructions

preheat the oven to 350 degrees

butter and flour or use baking spray a 12 X 18 X 1 inch baking sheet

In a stand mixer or large mixing bowl with a hand mixer, mix together the butter, brown sugar, condensed milk, eggs, instant coffee, vanilla and bourbon on low speed, just until mixed together, do not beat

In another bowl, whisk together the flour, baking powder and salt and mix into the wet ingredients until combined

Add the butterscotch chips, chocolate chips and pecans and mix well

pour onto the prepared baking sheet and spread evenly

Bake in the oven for 20 minutes, take out and rap the baking sheet a few times on the stove-top or counter and return to the oven and bake for another 15 minutes

cool for at least 20 minutes and cut into 20 large or 40 small bars
I don’t have a ton of bar recipes on here, yet but Pillsbury has 47 seriously good dessert bars no one can refuse
