Smoky Pinto Beans

I love simmering a pot of beans on a brisk evening and even though it’s spring, it has been cold. My recipe for these creamy smoky pinto beans is so comforting and will warm you up just like snuggling in your favorite blanket with your kitty cat, dog or human. The smokiness is from the chipotle chilies in adobo and the smoked paprika, I love both particularly chipotle…I have many recipes on this site that use them. If you are not a fan of chipotle, you can certainly substitute with any other kind of chili pepper, like jalapeno or roasted poblano or even a can of green chilies and I’m sure the recipe will still be stellar. I made this recipe easy by using a slow cooker, so your dinner can be cooking while you are away at work or working from home, playing chess, painting or macramé that new wall hanging; yes…macramé is making a comeback, ha, ha! For a healthy dinner tonight make these beans and pair them up with a piece of corn bread or warm tortillas, this will put a much needed smile on your face.

Smoky Pinto Beans

These savory & smoky beans can be simmering in your slow cooker revealing creamy goodness by dinner time

Ingredients

  • 1 lb dried pinto beans
  • 2 tbsp olive oil
  • 2 carrots, chopped
  • 1 small yellow or white onion, chopped
  • 1 celery rib, chopped
  • 2 tsp chopped garlic
  • 1 1/2 chipotle chili peppers, minced plus 1 tbsp. of the adobo sauce
  • 1 cup roasted red peppers, chopped (I used the kind in a jar)
  • 2 bay leaves
  • 3 tsp cumin
  • 1 tbsp chili powder
  • 2 tsp smoked paprika
  • 1/2 tsp kosher salt
  • 1/4 tsp course black pepper

Instructions

  1. Soak the beans overnight in a large bowl of water, drain, rinse and place them in a slow cooker

  2. Add olive oil to a skillet over medium/high heat and saute the carrots, onions, celery and garlic for 4 minutes and transfer to the slow cooker with the beans

  3. Add 6 cups of water and turn slow cooker on high

  4. Add the remaining ingredients and cook for 6 to 8 hours or until the beans are very tender

  5. Enjoy topped with your favorite items like salsa or corn chips

Recipe Notes

A great party idea is to serve these on a buffet right in the slow cooker with many bowls of toppings for your guests to pick and choose from.  This recipe is vegan but if you want to please all your party guests, put toppings out like cheese, sour cream, crumbled bacon, chopped tomatoes, chopped onion…etc.
