Roasted Grape Bruschetta with Blue Cheese & Walnuts
Roasting the grapes for this bruschetta brings out a deep, sweet flavor that compliments the strong cheese
Ingredients
- 1 baguette style French bread sliced into 1/2 inch slices, should get 24 slices
- 4 tbsp olive oil, divided
- 4 cups red or black seedless grapes, stemmed
- 1/2 tsp red chili flakes
- 1 tsp minced garlic
- 1 tsp kosher salt
- 1/4 tsp freshly ground pepper
- 1 tsp fresh thyme leaves
- 1 cup blue cheese, crumbled
- 1/4 cup walnuts, tossed and crushed
- balsamic glaze, sold in most grocery stores
Instructions

Preheat oven to 375 degrees

Place baguette slices on a sheet pan and with 2 tbsp. olive oil, brush each slice and bake in oven for 10 to 12 minutes or until golden brown and crisp

In a medium bowl toss together the grapes, the remaining olive oil, pepper flakes, garlic, salt, pepper and thyme and pour onto a sprayed or parchment lined sheet pan

Bake in oven for 24 to 30 minutes until grapes start to wrinkle and or blister, take out of oven and let cool but leave oven on and turn down to 300

Sprinkle the cheese on top of each slice of baguette and put back in oven until cheese just starts to melt, about 5 minutes

Place a few grapes on top of the cheese toasts and drizzle a bit of balsamic glaze on each one followed by a sprinkling of walnuts and enjoy
