Roasted Grape Bruschetta with Blue Cheese & Walnuts

Jaw dropping flavor is how I describe this amazing roasted grape bruschetta with blue cheese & walnuts. The rich flavor develops like magic when the grapes are cooked. Roasting them in the oven brings out the sweet, rich and complex flavors. Discover this Italian antipasto by making this crunchy, sweet and tangy roasted grape bruschetta with blue cheese & walnuts. The robust flavor combination in this small crostini became my new favorite taste obsession after just one crunchy bite. To sum up, this snack recipe is bursting with flavor from the tanginess of the creamy blue cheese and the sweet roasted grapes on a bead of earth shattering toasts.

The Popularity Of Bruschetta

I have served this roasted grape bruschetta with blue cheese and walnuts at so many parties and people rave about it.  Biting into the satisfying crunch of a small convenient canape with big flavor on it, is comfort in my eyes. With this in mind It’s no wonder that bruschetta is a popular party snack and appetizer item at parties or restaurants. Although bruschetta is typically served with chopped fresh tomatoes, basil, garlic or onion and some may have have cheese. There is nothing typical about this roasted grape bruschetta with blue cheese and walnuts. Whether it’s a celebratory event with party food or a simple weeknight snack.

Not to mention make sure to use a really good blue cheese with this roasted grape bruschetta recipe, not all blue cheese is the same and I love the creamy rich flavor of Point Reyes Blue, one of my favorites for sure!

Roasted Grape Bruschetta with Blue Cheese & Walnuts

Roasting the grapes for this bruschetta brings out a deep, sweet flavor that compliments the strong cheese

Ingredients

  • 1 baguette style French bread sliced into 1/2 inch slices, should get 24 slices
  • 4 tbsp olive oil, divided
  • 4 cups red or black seedless grapes, stemmed
  • 1/2 tsp red chili flakes
  • 1 tsp minced garlic
  • 1 tsp kosher salt
  • 1/4 tsp freshly ground pepper
  • 1 tsp fresh thyme leaves
  • 1 cup blue cheese, crumbled
  • 1/4 cup walnuts, tossed and crushed
  • balsamic glaze, sold in most grocery stores

Instructions

  1. Preheat oven to 375 degrees

  2. Place baguette slices on a sheet pan and with 2 tbsp. olive oil, brush each slice and bake in oven for 10 to 12 minutes or until golden brown and crisp

  3. In a medium bowl toss together the grapes, the remaining olive oil, pepper flakes, garlic, salt, pepper and thyme and pour onto a sprayed or parchment lined sheet pan

  4. Bake in oven for 24 to 30 minutes until grapes start to wrinkle and or blister, take out of oven and let cool but leave oven on and turn down to 300

  5. Sprinkle the cheese on top of each slice of baguette and put back in oven until cheese just starts to melt, about 5 minutes

  6. Place a few grapes on top of the cheese toasts and drizzle a bit of balsamic glaze on each one followed by a sprinkling of walnuts and enjoy
